Confetti... no Parade required!

I record Ina's Barefoot Contessa twice a day. Every day. After a morning
spent in bed watching eight Episodes, back to back, the one dish that just
begged to be made today was Ina's Corn Confetti. Go here to see it too!   

Fortunately, everything I need we already have!

Since it's just the two of Us I cut the recipe down a bit. Three ears of
corn versus five, half an Onion instead of a whole and just one pepper

Looks like Confetti to me!

Olive oil into the pan

Add the onion and cook over medium heat for Five minutes until tender

Stirring, of course!

I forgot how great Orange peppers smell and how sweet they are!

After a few minutes I added 2 tablespoons of Unsalted butter

After the butter melted I added the corn to the Pepper and onion

and Pepper

and Kosher salt too

After seven minutes the corn was tender so I added the Chives and
Basil. Honestly, is there anything better than fresh-Picked basil?

He just yelled down at me from the shower, Something smells good!

With chicken, steak, Salmon or just in a bowl... Ina's Corn Confetti is Fantastic!
