Valentine's Day make-Up dinner

Valentine's Day got a little Wonky on us last night and before we knew
it, we missed dinner and it was far too Late to do anything about it

Today there was a bit less Flying by the seat of our pants... So the
pork roast I planned for last night's Dinner made it to a plate!

I rubbed the roast down in Pisto's seasoning and let it chill-out in it all day. Then, I
browned it on all sides in a little Olive oil and crushed garlic. After the roast was
perfectly Crusty on all sides, I poured a cup of red wine over it and slide the roaster
into the oven. After 45 minutes at 350, our pork roast was a perfect 160 degrees!  

Following a 15-minute rest in the Covered roaster on top
of the stove, and a Drizzle of the red Wine reduction...

It made for a fine Valentine's Day make-up dinner!
