Summer Pesto

You know what they say... When life gives you Basil, make Pesto!

Of course, making Pesto after a 13-hour work day was a bit of a stretch but I couldn't help myself... Look at all of this gorgeous Basil:

I used my food processor for the First time tonight...
Nine years since I bought it and only Eight years after
its warranty expired - Better late than never though!

Washy-washy, because we refuse to eat garden bugs

My salad Spinner works Great for drying Basil - Wheeeeee!

Add 1/2 cup Pine nuts to 2 cups (packed) Basil

Pulse a few times and add 3 medium
(I prefer large'ish) cloves of Garlic, minced

Pulse garlic and add 1/3 cup Olive Oil in a steady stream
Stop to scrape down basil and add fresh cracked black
pepper and coarse Kosher salt to taste

Add 1/2 cup grated Parmesan cheese and whirl just until blended
And Freeze. Why? Because he couldn't
wait and ordered Chinese for dinner!
