Fourth of July Salsa!

When I found this recipe for salsa that includes Watermelon I knew it would be perfect for our Fourth of July dinner Tonight! Feast your eyes... and try the recipe that follows 
Had to make Deviled eggs for Brandon!
I picked the cucumbers right off the vine in our garden - Perfect!
Fantastic!
Grilled steak Tacos with Watermelon-Mango Salsa

Salsa:
2 cups diced watermelon (seedless)
1 cup diced mango
3/4 cup diced, de-seeded and peeled cucumber
2-3 green onions chopped
1 serrano chile (optional - I didn't use it)
1 medium avocado diced
juice of 1/2 lime
1 teaspoon sugar
1 teaspoon olive oil
1 teaspoon rice vinegar
2 tablespoons cilantro
Salt to taste

Steak:
Top sirloin
salt and pepper
8 flour tortillas
1/2 cup Cotija Anejo cheese 

Heat grill to high. Season both sides of steak with salt and pepper. Place steak on hot grill and close cover and cook until charred, about six minutes. Turn steak over, lower heat to medium-high and cook another 3-4 minutes for medium-rare or 5-6 minutes for medium. Allow to rest ten minutes before slicing.

Heat tortillas on top rack of grill for about 2 minutes per side until warmed through

Build your tacos - top with cheese and salsa, lots of Salsa, and Enjoy!
