I admit it, I am So ready for Spring! I'm missing the Trees and all the green that usually surrounds the house and this Warm, wet, humid holiday weather has me Feeling itchy. Feeling the Itch to de-Christmas the house right Now... Yes, I'm even eager to put away all those new Christmas decorations I picked up this weekend... I want to de-Clutter the whole house, clean Windows and get on with it! Thankfully, the man I love feels the same Way I do so tomorrow we'll Spend the day together organizing and putting things away. I got a little Jump on him this evening by tackling the Refrigerator, which will make for one very Happy raccoon tonight! You see, I tossed out all the Leftover turkey, ham, Deviled eggs and dinner rolls I know she will be Happy to gobble up for me. And, while I cleaned out the Freezer I found the last little tub of my Pesto so I decided it had to be dinner! The boys wanted Lasagna instead, which was fine, but I was in the mood for my Summer pesto. Honestly, if the pool were uncovered right now, I would have eaten my dinner poolside... If it's going to be almost 60 degrees in December and have the nerve to Not snow, it may as well Bloom!
Let's make Pesto chicken and bow-tie pasta, shall we?
Nothing better than fresh Lemons, grated parm, toasted pine nuts
and my Pesto to go with boneless Chicken breast and red onions over pasta
Meet Mr. Al Dente!
I'm cooking so Brandon and Bing cannot be too far away!
Notice Brandon's new haircut... You would think that a kid headed
off to the Army in less than two weeks would let his Hair grow!
But not my Brandon... He says he wants to go super
short now to Avoid the surprise. Honestly, as proud
as I am of Brandon, I hope the next eight days DRAG!
Shhhhh, my chicken is Resting
Yum! And, just look at those Sweet red onions!
Next stop, Pesto pasta!
this chicken could just as Easily top a great Caesar salad!
tastes just Like summer in a Bowl!
